Chefs Shaun Smith and Caryn England, co-principals of The Fusion Cooking
School, form a passionate team and host this unpretentiously stylish 48
seater restaurant as an extension of their renowned Westville-based chef
school in the same spot on the Berea where the former AKA and the Store
restaurants once stood.
Shaun, ex-regional chef of Woolworths, and Caz ex-executive chef of Quarters
Hotel and formerly sous-chef of AKA, are
joined by previous students Scott Walker (class of 2006), Basheera Motala
(class of 2007) as Head Chef and Sous Chef respectively at the helm of this
new adventure. Together their mantra is "A Whole New World of Flavour!"
With many years experience between Shaun & Caz, their global, trendy,
modern, health-conscious cuisine showcases the very best of world food
flavours with a strong Asian influence, and includes elements of molecular
gastronomy (as demonstrated on Top Billing TV) such as table-side creations
of ultra-smooth liquid nitrogen ice cream, liquid nitro shooters and
cocktails, table-side flambéd malva pudding, 4 hour "dishwasher" beef fillet
(cooked in a dishwasher!), 16 hours electric-blanket-slow-cooked oxtail, and
a mezze/tappas approach in nibbles of small bites of starters and desserts.
Vegetarian dishes and fish feature strongly on the menu as well. Recent
recipients of a Dinersclub Platinum award, their winelist is both extensive
and affordable, and they also have one of the largest ranges of whiskies and
Single Malts in Durban.
